I've done some breakfast quesadillas before. Usually though I stir-fry the meat and vegetables, then scramble in raw eggs/egg whites into an omelette disc. I split the omelette into two halves and lay them on soft tortillas or naans with cheese between. Fold the flat bread over and pan toast both sides to crisp the bread and melt the cheese.
